Voraz

Voraz is a Mexican restaurant in Mexico City (Roma Sur), $$$$; open Mon–Sat 13:00–01:00; Sun 13:00–22:00; book at https://www.voraz.com/reservas.

Roma Sur gastro-cantina in a former mechanic's shop-wood fire, industrial chic, and the hardest reservation in town. Chef Emiliano 'Nano' Padilla (Noma, Fäviken, Ryugin, Pujol) turned a 60-year-old mechanic's workshop into a prominent Mexico City gastro-cantina-brutalist bones, a wood-fired grill, and an always-changing menu of chaya churros with Cotija, whole wood-fired chicken with bitter orange, and pecan pie with mountain cheese. This small spot is highly sought after, with over 100k Instagram followers.
